Roa Chili Sauce (Sambal Roa – in Indonesian), is a type of Indonesian chili sauce that is famously known from North Sulawesi, Indonesia. The name “Roa” is originally taken from Roa Fish. Roa is a smoked flying fish (smoked garfish) which can be found in North Sulawesi water. As for the process, the fish was smoked until it reached a 90% of dried level. Moreover, the fish was stirred and combined with chilies and fresh herbs to create such a perfect blend of unique taste and quality.
